WHere is an easy version of a drink from our latest menu. Designed as a large-volume premix that's bursting with flavours of the holiday season, making it excellent for a holiday party. Any leftover cordial to use in breakfast cocktails, desserts, or to make another batch of this cocktail.
Bikini Recipe
Serves 10 guests
For the Clementine Cordial (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (yields 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Instructions
Making the Syrup: Combine the listed items in a saucepan, heat until it reaches a gentle boil, stirring until the sugar dissolves. After that, take off the burner and let it to cool down completely. Decant into an sterilised bottle, cap it keeping it in the refrigerator, where it will keep for around one month.
For the Batch Mix: Pour every spirits and syrup in a sizeable container, leave to sit for one hour, then pass it through , ideally through cheesecloth, to ensure it's perfectly clear.
For serving: Add 85ml of the cocktail base into your mixing glass filled with ice, and agitate carefully for about 60 seconds to cool it down. Filter into a frosted cocktail glass or a similar vessel, top with some cranberries adding the final touch with a brief mist of the essential oil over the drink.
